I don't think the gears would get any wider by changing the final drive gear. They'd all get taller.

It is my understanding that yes, you'd get 7 more to 3rd, 9 to 4th, etc... I'm pretty sure the rpm after a shift wouldn't change unless you changed the gear itself, not the final drive.
