Fuel has fixed my issue.
Disabling the lean spool and adding more fuel into the mix must have brought my mixture under control. I'm seeing a fairly rich 11.1 - 11.3 AFR during spool according to my still sporadic gauge. Next step is to trace the wires on my gauge and get her working properly.
