Yeah, If your AFRs are different after changing injectors, you need to adjust your injector size and latency settings to get them back where they belong. The AFR map should be reasonably close to the real AFR if everything is right (injector settings, MAS scaling, no boost leaks, etc).

Again, this all assumes that everything in the ECU's "view" is correct. If your latencies are slightly off then your cruise and idle may be great (and thats fine, you can leave that as it is) but your high load/airflow AFR may be slightly off at that point. In a "perfect" world where you perfectly scaled and had perfect latencies you would not need to change any of the fuel map. That is rarely the case and thus if your LTFT mid and low are OK you should leave them, then touch up the high load AFR if necessary.
