Here is how I did it:
1. Copy the ROM Metadata XML files to a different folder. These are the files from ECUFlash that are being used for your car. For my Evo IX, I need the 88590015.xml file and evo9base_20081101.xml file. 88590015 is the actual ROM and the evo9base file is an XML file that it includes and thus has to be in the same directory.
The default location for these files will be in:
C:\Program Files\OpenECU\EcuFlash\rommetadata\mitsubishi\evo
I copied them to my Desktop to be used by Evoscan.
2. Open EvoScan MAP Tracer and pick your log file.
3. Right-click on the bottom and click "Load HEX and XML files."
The first file you load is the ROM XML file you copied from ECUFlash. For me, this would be the 88590015.xml file sitting on my Desktop.
The second file is your actual .hex ECUFlash flash file (your current tune or the one you were using when the log file was created). If you don't have one, you will have to use ECUFlash to connect to your ECU and download whatever tune you currently have.
Now everything should be loaded and you can click on the parameters on the left to view them.

Anyone got a copy of EvoScan 2.5 they can send me to try out? I'm thinking maybe that's the problem, it tries to find the XML automatically, but just can't seem to??
If someone can send me 2.5 that would be great, just to try an eliminate the problem being a bug with 2.6
