I updated my hardware list with how interfaced with the stereo. My car is an RS so it came with no speakers, although the wiring was in place. Here is the jist of the audio system:
Tablet > 3.5mm Jack > RCA > 2 Channel Amp (bridged) > Metra Harness > Stereo Harness > Speakers
You might ask why I am using a 2 Channel Amp? Simple - Tablets, Iphones, etc only have stereo output. 4 Channel is really a waste, fading front to rear is unimportant. An audio aficionado could chime in and discuss performance of a 2 Channel Amp Bridged versus 4 Channel, but I am told its the most bang for your buck.
The next items I will be working on are:

I saw the screen with the gauges on it... but how do you get that data to the tablet? I understand the power source, and the audio integration, cell/wifi data, but not the data from the vehicle. Spill the beans man!

Thanks for all the great comments everyone! I got a Cobra Iradar for Christmas and have added it to my arsenal. I also got audio integration to work by using a Griffin TRRS adapter (They call it hands free). Finding the right cable was a real pain and took lots of research.
All said and done I now have a stealth mounted radar detector connected to my tablet, I also have voice command using vlingo app. Another cool addition has been Netflix and Plex. No - I dont watch movies while I drive but its nice to have video content when I am stuck waiting in the car for whatever reason.
To answer previous questions, I have gauges via an app called Torque, and a hardware piece called Bluetooth ELM. Torque works very nicely and is well priced. I offered to beta test for Evoscan but he didn't seem very interested. If you have an Android phone, I do recommend Torque, there is nothing close to it yet on the market.

I tried using the app torque and every gauge works great except for the boost gauge. It just maxes out at 3.1 psi. Does the boost gauge work for you? Nice setup I would like to have the same setup in my car.

what pid read speeds are you getting for torque gauges. Im trying this setup and i bought the expensive scantech adapter and my read speeds are horrible...like 10pids/sec and it makes the gauges unusable..
