Do you guys know of any deals or personal experiences with doing this the most affordable way.

Source the parts, used. Collect them one by one as they will be cheaper. People charge quite a bit for everything needed for a swap. But, if you can find people with just a mount.. or just a harness etc., it will be cheap because they will have a harder time getting rid of it.
I put my collection together DIRT cheap.
The only things I'd buy together, unless you have a LOT of time to wait, is shifter and cables. If you buy one, by itself, it will probably be a long time before you find the other.

just go on forums, facebook groups, ebay, like kaj said, buy the parts your self. complete swap kits are usually wayyy more expensive then buying everything separately
