I usually use about 4.5 or 5 qt for an oil change. The fill spec is technically 5.6 as mentioned. The difference is that the oil doesn't always drain from the oil cooler and that is included in the 5.6 qt reading.

I've asked around for a good way to drain the cooler without any solid answers ... some say it should drain fine and thats not the issue.

And yes, let your car idle for a few minutes after adding oil before checking the level or it will likely not be accurate.

I wouldn't freak out about adding so much oil just yet. Just warm it up for a little while and the check the dipstick again. If there's too much just drain a little bit. My car has always taken around 4.75 quarts of oil for every change.

For the future, I would just do the oil change myself to avoid these kinds of problems. If it's cold outside, I'd just do it in the garage or take it to a friends garage.

i know the oil is high but will this level be to high or should i drain some or is it good?

drain out about a half a quart, then check the stick again. you dont want it above the top notch on the stick. By the way, you only ever need more than 5 quarts if you completely drain the whole engine and all oiled components. The is because some parts never actually drain all the oil in them (ie: oil cooler, turbo, etc)

lowest notch is 1 qt low. Top notch is where it should be. You're like 1.5-2qts over.

I agree with everyone else, drain about 1-2 quarts so your engine oil level is between the two notches.

Next time, since you know the Evo only needs about 5 quarts of oil, don't add over 5 quarts of oil even if the oil change guy tells you to. Just go home and check the oil level when the engine is cooled, then decide whether you need more oil. If he didn't tell you you needed more oil, I bet the oil level would be in between the two notches.

DRAAAAIIIN like now lol, that is waaay too much. they must have read the cars manual... it says 5.6 quarts because that is the entire capacity of the system. Not how much you should fill it.
