well its a leason learned and now we get to see the process of a stock roof being transformed into an AMS CF roof sweet. I would call insurance as well after a rain storm and claim in happened in the storm

Wow this sucks. Couldn't have fell in a worse place That's sods law.
I think a CF roof would look crap on a daily driver IMO I'm pretty sure they're only ment for race cars and if the car is stock it will look dumb. That and I wonder how the fit is....if it rattles etc? hmmm. Plus if I was buying a used Evo with only a cf mod I'd ask myself serious questions, why. I suppose you could always paint it... I'd still be worried about the fit and if it rattles though.
If it was me I'd claim on the insurance, make sure you get a good body shop. If repaired properly it should look like new. Don't quit until you are completly happy with the repair. If you're not happy with the reapair, take pictures write to your insurance, show them photo's and get them to fix it until it is right.
I know it's an inconvenience, but this is what insurance is for.

i laugh every time i see a c/f hood or fenders on an evo,there is just no substantial weight savings,even the c/f trunk is pointless becaus of the front rear weight split is so front biased already.the one c/f mod that is worth doing you have the opportunity to do at no out of pocket cost to you and you dont want to do it? the performance benefit is taking away weight from the roof lower s the cars center of gravity as well as the overall weight of the car .increases handling but from the looks of your car (while clean) does not appear to be modified.as a side note i dont think the roof is serial numbered like most of the body panels. take the opportunity and make an upgrade!

The fact is: you can find lighter body panels for ALL of the Evo, Jake is right. But, it is laughable if you see someone with anything cf other than the roof without having a story (accidents, usually). It isn't that you can't find them, it's that you can't find them at a good enough deal to justify spending the money on them unless you're loaded, some sort of CF nut, or something damaged the previous panel.
So if you've found some for a good deal, I'd love to see them. And ebays that fade after a week don't count, been there, seen that. 2-3 lbs off your hood isn't even worth it at 300 dollars, until you're some track racing nut who wants to shave all the weight possible.
