how many RR Evo 8 RSs are there
is there any documentation on exactly how many models came in a certian colors..

Well I have these numbers for you
06 IX RS = 386 (official production number)
05 and 04 VIII RS = 350-400/year (Estimate)
Out of those numbers, there is/was supposed to be half white and half red. But from what I have seen, I think its more like 60-75% white and 25-40% red.
There is some reasonable, logical estimates of how many RRs VIII RS there is.
