Interlock switch gets pressed when the clutch is fully depressed and is interlocked with the starter motor. Clutch pedal position switch gets pressed when you release the clutch. One thing I believe this switch controls is the "vehicle not moving/clutch depressed rev limiter" for launch control. With the clutch out the rev limiter is higher, with it pressed in and vehicle not moving, the limiter is lowered to 5k I believe. Unless, of course, you have a custom tune and they changed the rev limiters.

These switches are most likely tied to some other controls but I believe these are the two main things.
