There were some threads discussing the availability of aftermarket leather from a Mitsubishi dealership for around $1200. I'm not talking about the optional package that is available on '04's. I'm interested in the package that '03 Evo owners can purchase through mitsu. to add leather after they have purchased the car.

I called a dealership in Texas and they found the package for something like $1400. However, they said that all the part numbers for the package weren't available in their online system. I really wanted to know what all was included (seat covers, door inserts, anything else) and how it looked (pics).

If anyone has any information or seen how it looks please let us know. I'm wondering whether it's similar to the '04 w/ leather interior (minus the nice leather recaro seats)?

Yeah that definitely sounds like a good alternative. But I really like the pics I've seen of the '04 leather interior. I'm hoping they use similar pieces (except the seat of course).
