I'm actually thinking there is probably enough room for a 245 tire, which i'll test out once these are worn through. I got the 235 just to be on the safe side

Last weekend for the first time I ran the Enkei NT03+M 17x9.5 +38mm wheels with shaved 255/40/17 Toyo RA-1s on my stock 2005 Evo VIII GSR. Supposedly the largest wheels and tires that can be fitted without rubbing issues. They clear the calipers fine with no spacers needed. In regular driving they didn't rub at all. During hard cornering they rubbed a small part of the plastic wheel well liner on the right front until I tucked it out of the way with zip ties. They also rubbed the left rear inside metal wheel well until I spent 10 minutes hitting the inside wheel well with a big hammer. That only moved the sheet metal behind the back seat, so it didn't show. Then they didn't rub any more, even during VERY hard cornering.
So overall the adjustments were relatively easy to make in exchange for the fantastically increased handling these wider wheels and tires offer. My fenders remain unchanged. I can't call this a "no rub" set up, but I think the small modifications required to eliminate rubbing are well worth it!

I checked the Enkei website and they dont make a 38mm offset with this size rim. Were the rims you got 44mm? Thats the only offset i see on their web site? I know you said that you did not use spacers...have you had any other issues with rubing anywhere on the rear control arms or anything else. Thanks

Apparently Enkei hasn't updated their website yet. The 38mm offset is new/special order. My wheels are not 44mm. You can get the 17x9.5" with 38mm offset at a good price from Kyle at hotlapmotorsports.com. He is offering some great deals right now as he builds his customer base. My NT03+M wheels do not rub on the control arms even during VERY hard cornering at the track. They are a very stiff wheel and in hard cornering they won't barrel flex as much as the RPF1s. They are a couple pounds heavier, however, but for high speed track driving, the added stiffness is worth the extra weight. If you are just going autocrossing, then I would recommend the RPF1s.

I'm looking at a set of volks that are 17x8 with a 41mm offset. I was looking throuh the posts and it seemed like most of the offsets were around 30ish. Anyone know if these will fit? Thanks.

Will it look better with a 5mm spacer ... yes
Will it clear the brake rotors ... you didn't specify which model so I have no effing clue. You might need a big spacer. If it is much more than 15 mm, the tire may rub on the fender liners.
Check the Rays website, it's great, they tell you on the size/price guides which wheels will clear the Evo brakes ... http://www.rayswheels.co.jp/indexe.html ... that should be the English version.

Will it clear the brake rotors ... each wheel is different so I have no effing clue. You might need a spacer. If that spacer is more than 5-6 mm, the tire may rub on the fender liners.

Right now I run a 17x9 +35 with 255/40/17 Toyo RA-1's and the tires (not the wheels) rub on my Ohlins coilovers unless I use a 5-6mm spacer. Only the front rubs, not the rear.
A 235/45 tire would probably be fine, but most ppl go to a 9" wheel to get a wider tire, so be careful. It should clear the stock suspension, and most springs without a problem. There are like a million ppl rockin' the 17x9 255/40 setup on stock suspension or lowered with springs with no spacers and no rubbing. Apparently my coilovers are the exception to the rule.
