a 10mm spacer all the around should suffice to make them fit well with a 265/35 or 255/35 tire and rear fender rolled flat and pulled a bit. Not sure if that will clear the brembo's though. You may need a bigger spacer up front, which is fine. The front has a lot more room for lower offsets than the rear.

Rear clearance to the lower control arm maybe an issue depending on what tire you choose. You may need a rear spacer as well

Too large of a spacer up front would be a concern IMO. If you need something greater than 25mm, I would be concerned (dont like spacers, at all, if you ask me)

I would also make sure they're real Volks. $700 is awfully cheap for a set of wheels that retails for over $3k...

I could make them fit one way or the other though right? I don't want to get rid of them.

Yes, for sure

Install the wheel & guesstimate what size spacer you will need. Look at the rear fitment & check the clearance to the lower control arm

I was going to say, those things have to be bent to kingdom come.

EDIT:

I have 18x8.5 with 235/40/18 and do not use spacers.

Before you go ahead and order a set of spacers, mount the wheels on one side of the car and go from there. If they fit, drive on them for a little and make sure they're not complete trash.
