E85 water absorption-fact or fiction

Alcohols do absorb water, up to a point. At which point they are "fully saturated" and cannot absorb any more water, and phase seperation occurs ( like oil/water layers ).
Dunno if that makes sense.
Ethanol will "gel" in the presense of water. There was a fellow here in CO who got excessive E85 blow-by and after the winter, his oil turned into jelly.
If you burn through E85 quickly, like less than a month or two, it shouldnt be a problem. But long term E85 storage is bad. Typically you should do a vial shake test at each fillup too, to make sure the station you're filling at isn't contaminated. But this seems to be very rare.
