Which tire?
Falken 615
Federal 595RS
Which should I go with for a few track days and mostly street driving?
Also, with the Swift -R springs and BBS wheels, can I fit 255-40 without rubbing or rolling my fenders?

Well this is going to get closed quickly but since I am nice here it goes. Yes, you can fit that tire size on your rim however I would recommend a 245/40 or 245/45 instead.
As for your tire of choice, there are a lot of better options these days. Take a look at Dunlop Z1 Star Specs, Bridgestone Re-11, Yokahama AD-08 etc. Please just search because this has been discussed so many times.

Choosing between those 2 tires, I'd say Falken RT-615s. Good tire actually.
For performance and price a 255/40/17 in those would probably run about $180 a piece, Dunlop Star Specs $170, Yokohama AD08 $210, and Bridgestone RE-11's $230 (all estimated cost). Hope that helps.
