So a more passenger style car tire one with specs like 205/65R15 is going to have a smaller arc and appear more rounded vice a tire like you mentioned a lower profile tire will be more square in shape and have a longer arc?

At what point does an increase in rim width stop improving the tires grip/performance?

More or less - yes.

0.5-1 inch either way -- depends on car, driver feel, setup. Like xtnct mentioned about the BMW. Teams will bring different setup and test to see what works best for the car.

Extremes: Going too wide (stretch tires) can/will lead to bead unseating. Too narrow and tread will not have an optimal contact patch.
