Starter and clutch switch kills are super easy to defeat.
All you need is a wire that's 4ft long with two alligator clips to jump power right to the starter solenoid terminal and the car will crank.
A fuel pump switch is much more difficult to defeat because the fuel pump wiring isn't always easy to get to. On my car (supra) you need to drop the tank, or find the wiring in the harness that runs under the carpet. Not easy or fast.
Besides, anyone who is wiring up an AFC or any sort of engine wiring is messing with wiring that could cause the car to stall (which is what I assume you're worried about a fuel pump switch doing). Just do it right and there's no problem.
An ignition (coil power, or igniter power) kill switch works as good as a fuel pump switch, and it's easier because you're dealing with smaller gauge wires. Both wouldn't hurt though.

I myself just before my car went into storage in November invested in a Remote start/alarm combo that will be a big deturrent to say the least.
I can't imagine what I'd do if I found the person who took my car. Again, best of luck to finding your car dude
